So far in the statistic page it only says the amount of contacted users, active conversations and last few users who contacted your bot. I was wondering if it were possible to also have a log of every user who contacted your bot and see what was said between them and what activity took place.

That's not a feature we're planning on providing. You could, however,
easily log the conversations on your end. Just add a logging function
to the program running on your bot's url.
Take the contents of the msg variable and the end user's username and
network and write them to a flat file or to a database. You could even
add a timestamp so you could identify specific conversations.
